Almond and coconut cake – by Ana

No flour but using Coconut flour and almond as a main dough. Lots of protein and gives you energy! Great for breakfast and snacking before a trip to a gym... well, for a school run for me.

Ingredients

  • 3 eggs
  • 3 handfuls of Demerara sugar
  • 1 tbspoon of coconut oil
  • 5 dates
  • 1 small glass of buttermilk
  • 125 gr of ground almonds
  • 100 gr of coconut flour
  • 2 tspoons of baking powder
  • Some cinnamon
  • Almond bits, a bit of sugar and cinnamon to decorate (optional)

how to

-Beat eggs with sugar & dates
-Add oil (it might not even need the oil...) & buttermilk.
-Put the flours without beating, just mixing with baking powder in.
-Once in the tin, decorate with almond bits & a sprinkle of sugar and cinnamon to like.
-in the oven 170C during 40 ti 45 mins.
That's it!
