Carrot Soup

Kids love carrot soup. So I put secret ingredients so the goodness can be taken all together.

Ingredients

Carrot Soup (with vegetables) (serves 5)
  • 5 medium carrots
  • 1 small Onion
  • 1 garlic Clove
  • 1 small Tomato
  • Chicken Stock (approximately 200ml)
  • Optional - Other vegetables
  • 1/2 Broccoli Stem
  • 1 small boiled Beetroot

how to

  1. Brown onion and add garlic before adding rest of the ingredients
  2. Boil them until everything is cooked and soft. Usually takes 20 minutes depending on what vegetables added.
  3. Once cooked and cooled, so it's not boiling hot, blend using blender to smooth consistency.
  4. Put the pot back in the cooker, heat up again and season with salt and herbs of your choice.
  5. Serve and enjoy while it's warm!

tips

  • Pictured soup is garnished with goat cheese and dried parsley, but kids preferred with a drop of cream and croutons.
