Basic Bread Dough

This bread is a basic dough that I make at least once a week. It can be a dinner roll or a basic bread dough to make sausage rolls... well basically for anything. It is a Japanese recipe and is used for savory bread or sweet bread. I will upload some of those tasty bread later on!

The picture on the right is 20% wholegrain + 80% white to make it a little healthier. If you are making sweet bread, like apple bread, suggest to use white 100% dough.

Ingredients

For the Bread

  • Strong Flour - 300g
  • Butter - 30g
  • 1 Egg + Milk = 210cc
  • Sugar - 30g
  • Salt - 4.5g
  • Yeast - 6g

how to

1. Insert everything in the bread maker and set to "Pizza" setting.
2. When completed take the dough out and knead until the air is out of the dough. And proof the dough for 15 minutes.
3. Shape the dough into desired shapes and proof further 20 minutes in warm environment.
4. Bake in the oven 200c for 10 to 12 minutes.

tips

*20% strong wholegrain flour + 80% strong white flour = a little bit healthier. In this case, I use 50% shortening instead of 100% butter. *The key is resting the bread before putting into the oven for bake. Also adding a bawl of warm water while resting the dough in the oven will help the dough not to dry out.
