Quick Cucumber “Kimchi”

This is a quick side dish you can make in no time. While you are making the main, it's done. I only called it a quick kimchi but I only named it so as my old Chinese friend back in my Uni life in Sheffield, who unfortunately lost in touch, taught me how with the name.

I wonder how she is doing. I'm sure she is doing great whatever she's up to and making this dish hopefully remembering me sometimes. 

Total Time: Approx 12 minutes

Ingredients

  • About 20cm cucumber
  • 1 spring onion
  • 1 garlic clove

Seasoning

  • 1/2 teaspoon salt
  • 1/2 Japanese chilli source (Ra-Yu)*
  • a pinch of chilli powder

How To

  1. Wash cucumber well and cut into bite sizes and mix well with salt and leave for 5 to 7 minutes. 
  2. Drain all water comes out of cucumber and add very finely chopped or grated garlic and mix well.
  3. Leave for further 2 minutes and drain any excess water. 
  4. Mix chillis and finely chopped spring onions and leave for another couple of minutes before serving. 

tips

*With seeds, it will be hotter! You can adjust the amount of chilli according to your pallets.
