Tuna Pasta with Cherry Tomato and Mozzarella Cheese

Tuna pasta is my kids favourite and mine, as it's quick & easy plus eating fish dish makes us feel better. I probably make pasta with tinned tuna the most if our old time favourite bolognese sauce is not available. 

This one is with olive oil, fresh cherry tomatoes and buffalo mozzarella cheese. But I always use some hidden vegetables because with pasta sauce, it's very easy to disguise vegetables into something kids don't take notice too much. In this one, I've added finely chopped celery, broccoli stems and yellow bell peppers. My 8 and 10 years old kids are quite good with vegetables but I just want to put as much nutrition as possible in any dish I make.

Ingredients

Serves 4

300g Pasta of your choice
1 Tinned Tuna (preferably with olive oil and big chunks)
10 - 15 cherry tomatoes
1 large Mozzarella Cheese
1/2 onion finely chopped
1 Garlic clove finely chopped
*Plus other vegetables you wish to add

For Seasoning
2 tablespoon of extra virgin olive oil
Salt and pepper
*1 teaspoon of salt for boiling pasta. 
Some Basil (dried or fresh) leaves

how to

  1. Boil the pasta to al-dente with a teaspoon of salt in a large pot. 
    Follow the instruction depending on the pasta but make sure it's not overcooked. 
  2. While the pasta is boiling, chop all the vegetables except cherry tomatoes and fry in a big pan* until all the vegetables are very soft.
  3. Add a tin of tuna (no need to drain all the oil if it's olive oil) cherry tomatoes and cook for 1 minutes and add mozzarella cheese as you break it into slightly bigger sizes than tomatoes.
  4. Add cooked pasta to the pan and mix everything with a couple of tablespoons of the pasta water used for boiling. 
  5. Add olive oil (if the olive oil was added from the tin, reduce here), basil leaves and season with salt and paper. 
  6. For me, I sprinkle separately prepared fried garlic or garlic granules on top and done! 

tips

*A big enough pan so that you can add the pasta to the frying pan once cooked.
