Oatmeal Dates Pecan Cookies

So glad I found this recipe, oatmeal dates cookie, as my dried dates were near the expiry and needed to make something for kids quickly!! I gave it a little twist as reducing the amount of sugar and adjust other ingredients to begin with and added pecan. It turned out very good! Kids loved it too so here we go, if you happen to have dates and pecan, or any other nuts (or without nuts) waiting to be eaten in your cupboard, give it a go! 

Ingredients

250g dried dates 
70g unsalted butter 
70g brown sugar
85g  whole grain self-raising flour 
3/4 teaspoon baking soda
1/2 teaspoon salt (if salted butter is used, you don't need to add here)
1 large egg
1 teaspoon vanilla
180g quick-cooking rolled oats

how to

  1. Preheat oven to 175c.
  1. Coarsely chop dates and pecan. Melt butter in the microwave for 30 seconds in a large mixing bowl.
  2. In the same bowl, add brown sugar and mix with butter until smooth.
  3. Sift flour, baking soda, and salt over butter mixture.
  4. In a cup lightly beat egg and stir into flour mixture with vanilla, oats, dates and pecan until combined well.
  5. Prepare 2 baking trays with baking sheets. Make small balls with hands or with spoons and place them on the tray about 2 inches apart. Bake cookies in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden brown, about 18 minutes total.
  6. Transfer cookies to racks to cool.

tips

  • Cookies keep in an airtight container about 1 week.
  • I would add 1 tablespoon of some sesame seeds next time. 
  • I added some chickpea flour (about 10 percent of flour) and that has given nice flavor but that is not necessary.
