Basic Sushi Rice

Making sushi rice is simple as long as you have Japanese rice (never any other rice please!) and vinegar, sugar and salt ready. Make sure you cook the rice slightly harder than usual considering the vinegar mixture you have to add after cooking the rice. Here is the measurement for the sushi-vinegar mixture. Mix it with the freshly cooked rice while it’s hot. Another tip is the cutting motion while mixing as you do not want to mash grains of the rice.

Rice Vinegar Sugar Salt
1 cup 20ml tbsp 1(9g) tsp 1(5g)
2 cup 40ml tbsp 2 (18g) tsp 2(10g)
3 cup 60ml tbsp3(27g) tbsp 1(15g)
4 cup 80ml tbsp 4(36g) tbsp 1 + tsp 1(20g)
5 cup 100ml tbsp 5(45g) tbsp 1 + tsp 2(25g)
