Healthy Oatmeal Chocolate Chip Cookies

These cookies are guilty free as it's sugar free! And, kids love them. You can reduce the amount of honey accordinging to the amount of sugar there might be in the chocolate you're using. Personally this is a win win recipe for a very satisfying treat for you and your family.

This photo is with some peanuts but you can add any nuts or seeds to add extra flavour and texture.

Ingredients

  • 1 cup quick oats
  • 3/4 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted and cooled
  • 1 teaspoon vanilla
  • 1 large egg
  • 1/2 cup honey
  • About 1/2 cup dark (or any other) chocolate chopped
  • how to

    1. Prepare 2 mixing bowl. In the first bowl, mix the dry ingredients; Oats, flour, baking powder, cinnamon and salt, using a whisk.
    2. In the second bowl, put melted butter and whisk in vanilla, egg, and honey one by one and whisk well all together.
    3. Add the wet ingredients into the other bowl with mixed dry ingredients. Use a wooden spoon to stir until everything is just mixed. Be careful not to over mix.
    4. Fold in 2/3 of the chopped chocolate into the dough.
    5. Roll out the dough to long stripe and refrigerate the dough for about 30 minutes or freeze for 15 minutes.
    6. Preheat oven 165c while waiting for the dough to be ready.
    7. Cut the dough into 15 cookies
    8. *or hand shape, and place on baking sheet at least 1 inch apart.

    9. Bake in the preheated oven for about 12-13 minutes.
    10. Once removed from the oven, press the remaining chocolate chips into the tops of the cookies.
    11. Place them on the cooling rack and they are ready to eat when cooled!

    tips

  • You can mix all the chocolate at once and skip the decoration bit at the end.
  • Nice to dunk into milk!
  • You need 2 bowls and a oven as minimum tool to make this cookies
  • Alternative or Additional Ingredients
    • Replace 2 to 3 tablespoons of wholemeal flour with chickpea flour
    • I like to add some seeds such as sesame, flax and pumpkin seeds etc..
